We seek to appoint a Postdoctoral Researcher to carry out research as a part of a project aiming to produce high value functional products from DDGS (Dried Distillers Grains with Solubles). The project is funded by the BBSRC Integrated Biorefining Research and Technology Club (IBTI Club) and is carried out in collaboration with Rothamsted Research.

The successful candidate will design and conduct experiments with the aim to produce and characterise protein films from gluten fractions extracted from DDGS. The extraction work is currently being carried out by another post-doctoral researcher working on the project. The gluten fractions originating from the separation of DDGS samples will be characterised to determine their protein composition. The film-forming properties of the DDGS gluten and the effect of process conditions, such as the extrusion temperature, the use of plasticizers, the mechanical work input and the pH, on the mechanical properties of the films and their oxygen and moisture permeability will be examined aiming to improve their processability and field of application. The films produced will be characterised by X-ray scattering and advanced microscopy, and for their thermal, mechanical and gas barrier properties. This combination of analysis will reveal the microstructure and morphology of the extruded DDGS gluten films and will allow the establishment the relationship between the protein type and films’ properties and function. The successful candidate will be expected to work closely with researchers at the University of Reading and Rothamsted Research during the lifetime of the project and will be expected to help prepare reports to the funding agency as well as present his/her work in the bi-annual IBTI dissemination events.
